What you will need:

-125g butter

-1 egg

For almond speculoos:

3 tablespoons flaked almonds

-Flour for rolling out the dough

-Cookie cutters

 

1.Prepare the dough. Beat the soft butter and egg in a mixing bowl with a hand mixer until fluffy.   Add the baking mix and knead into a soft dough using the dough hook. Finally, knead briefly with your hands and shape into a ball. Flatten the dough slightly and wrap it in cling film and let it rest in the fridge for 1 hour.

2.Cut out cookies. Roll out the dough thinly in portions on a floured work surface. For a particularly beautiful motif, a dough roller with motifs or a dough stamp can also be used. Cut out cookies using cookie cutters and place them on a baking sheet lined with baking paper. To make almond speculoos, sprinkle almond flakes on a plate and lightly press the bottom of the cookies into them before baking.


3.Bake the cookies. Bake in a preheated oven at 180°C top and bottom heat (fan oven 170°C) on the middle rack for 10-12 minutes. Carefully place the cookies on a wire rack and allow to cool. Store the cookies in an airtight container.
