What you will need:

-Chocolate with +85% cocoa content, optional
1.Prepare coconut mixture. Separate the eggs and beat the egg whites in a bowl with a hand mixer until very stiff. Add the baking mix and carefully fold it into the stiff egg whites using a spatula or wooden spoon.
2.Shape and bake macaroons. Using two teaspoons, form approximately 4 cm large mounds of the mixture and place on two baking trays lined with baking paper. Bake in the preheated oven one after the other at 180 °C top and bottom heat (fan oven 160 °C) on the second rack from the bottom for approx. 15 minutes, depending on the size of the macaroons. Carefully place the macaroons on a wire rack and allow to cool.
3.Decorate. If desired, melt chocolate and decorate coconut macarons with it or dip in chocolate. Store the macarons in an airtight container.
