What you will need:

200g vegan margarine (e.g. Alsan)

-Icing: 200g powdered sugar + 3 tablespoons lemon juice

-Decoration: pistachio nuts, sugar sprinkles etc. for decorating

-Cookie cutters

1.Prepare the dough. Pour the baking mixture into a mixing bowl. Add margarine and knead the dough first with a hand mixer with dough hooks and then by hand. Let the dough rest in the refrigerator for about 30 minutes.

2.Cut out & Bake. Roll out the dough thinly (approx. 5mm thick) on a floured work surface. Cut out cookies using cookie cutters and place them on a baking sheet lined with baking paper. Bake in a preheated oven at 180 °C top and bottom heat (fan oven 170 °C) on the middle rack for 10-12 minutes. Carefully place the cookies on a wire rack and let cool.

3.Decorate. Spread the cooled cookies with icing (mix about 200g of sifted powdered sugar with 3 tablespoons of lemon juice) and decorate with pistachio nuts or sugar sprinkles as desired.

For a non-vegan version, simply replace margarine with butter and add 1 egg.
