Instructions - Vegan Pancakes

What you will need:

-3 tablespoons neutral flavored oil (e.g. canola)

-1 1/2 cups (350ml) soy milk

-3/4 cup (180ml) water

-Vegan margarine or butter to cook the pancakes

1.Mix the dough. In a large bowl mix together the baking mix, oil, soy milk and water with a whisk. Let it rest for 5-10 mins.

2.Cook the pancakes. Heat a pan over medium-high heat. Grease the pan with vegan margarine or butter and add a small portion of batter (approx. 1/4 cup). Cook until bubbles form, then flip over and cook until golden brown. Repeat with the remaining batter.

3.Enjoy! Serve with maple syrup and fresh fruit.

Tip: For a single serving, you can divide the recipe by 3: use 115g baking mix, 1 tablespoon oil, 1/2 cup (120ml) plant based milk & 1/4 cup (60ml) water.
