Instructions - Herbal Olive Bread
What you will need:
-1/4 teaspoon (1g) instant dry yeast
-3/4 cup (4.9oz/140g) black olives (pitted)
-1 1/4 cups (300ml) cold water
-Dutch Oven or Covered Pot(ø 8"/20cm)
Dutch Oven or covered pot (clay,ceramic,pyrex,enamel) that can handle high temperatures.

1.Mix the dough. In a large bowl mix together baking mix and yeast. Add olives and water and stir with your hands until blended. The dough will be sticky, which is ok.
2.Let the dough rise. Cover bowl with plastic wrap and let rest for 12 to 24 hrs at room temperature.
3.Shape the dough. Flour a work surface and place dough on it. Fold the outer sides into the center, one side at a time, until a loaf is formed. Place dough in a bowl with parchment paper, let rest for 30 mins, covered, while you preheat the oven.
4.Heat the oven & pot. Place empty covered pot (with lid) in the lower third of the oven and heat to 450˚F (230˚C) for 30 mins.
5.Bake the bread. Remove the empty covered pot from the oven (careful, it’s very hot!). Place the dough and parchment paper into the pot, cover with the lid and bake for 45 mins.
